Mushroom-Dusted Pan-Seared Fish

A beautifully crisp, golden fish fillet coated in Oyster Creek mushroom powder—bringing rich umami flavor to a light, elegant dish.

Ingredients

1 lb fish fillets (cut into 4 pieces)
2 tbsp olive oil (divided)
1/2 oz Oyster Creek mushroom powder
1 tbsp cornstarch
1 tbsp butter
Salt and pepper to taste

Instructions

Prepare the Fish
Brush fillets with 1 tablespoon olive oil. Season with salt and pepper. Let rest for 10–15 minutes.
Create the Coating
In a plastic bag, combine mushroom powder and cornstarch. Shake to mix evenly.
Coat the Fish
Add fish fillets to the bag and gently shake until fully coated.
Pan-Sear
Heat remaining olive oil and butter in a skillet over medium heat. Add fish and sauté until golden brown on all sides and cooked through.
Serve
Plate immediately with a squeeze of fresh lemon or a light herb garnish.
